Tuna Salad Stuffed Bell Peppers
For the Tuna Salad:
2 cans tuna in water; drained
¼ c. light mayonnaise (I use homemade mayonnaise, but you can choose your favorite)
¼ c. diced celery
¼ c. diced red onion
½ lemon, juiced
1 large fresh garlic clove, minced
Salt and pepper to taste
Paprika for topping
3 large bell peppers, sliced longways with ribs and seeds removed
In a large mixing bowl, add all ingredients except bell pepper. Spoon tuna mixture into bell peppers evenly. Sprinkle with paprika.
Packing tips:
This can be a meal or a snack. If you don’t want to eat the peppers stuffed, you can also slice it into strips and dip it in the tuna salad. Use your Kozy Wraps to wrap your bell peppers before placing them in your lunchbox.
